Kabura
"Kabura (turnip)" is a confection inspired by Kyoto vegetables, particularly the turnip (kabu). This popular confection, named "kabura," is enjoyed at year-end tea ceremonies. In winter, as the news announces the start of the pickling process for "senmai-zuke," traditional scenes of craftsmen using a tool reminiscent of an overturned plane to thinly slice large turnips unfold. The iconic "Seigoin kabu," a white and sizable turnip representing Kyoto winter, is depicted. The confection "kabura" is crafted with white sweet bean paste and added binding agents, inspired by the turnip and traditional techniques. 京野菜の蕪をモチーフにしたこなし。その名も「かぶら」は、年末のお茶席で人気の上生菓子です。蕪の千枚漬けの漬け込みが始まったというニュースを見ると、冬がきたなぁと感じます。白く大きな蕪、京野菜の「聖護院かぶ」は、京都の冬の代名詞の一つ。
