Kabura

  • Kabura

"Kabura (turnip)" is a confection inspired by Kyoto vegetables, particularly the turnip (kabu). This popular confection, named "kabura," is enjoyed at year-end tea ceremonies. In winter, as the news announces the start of the pickling process for "senmai-zuke," traditional scenes of craftsmen using a tool reminiscent of an overturned plane to thinly slice large turnips unfold. The iconic "Seigoin kabu," a white and sizable turnip representing Kyoto winter, is depicted. The confection "kabura" is crafted with white sweet bean paste and added binding agents, inspired by the turnip and traditional techniques.
