Hanabiramochi
English follows Japanese. 一年で最も冷え込む季節「大寒」。この時季に汲まれる水「寒の水」は一年でもっとも冷たく、澄みきって、清らかなので日本酒や味噌、醤油の仕込みにかかせないそうです。昨年仕込んだ味醂、お醤油の出来上がりが楽しみです。初釜茶会のためにお茶菓子を作らせていただきました。花びら餅、紅白梅の琥珀糖。The coldest season of the year "Daichan(大寒)" starts January 20th. The water drawn during this season is the coldest, clearest, and purest water of the year, and is said to be indispensable for making sake, miso, and soy sauce. I am looking forward to seeing the mirin (sweet sake) and soy sauce that I prepared last year. Made to order wagashi for the Hatsugama tea ceremony. Hanabira mochi (rice cakes) and red and white plums Kohakutou jelly candies.
